Smith Island was founded in 1608 in the middle of Maryland’s Chesapeake Bay. Smith Islanders have been sending cakes since the 1800’s as a symbol of community, well wishes, and many happy returns. When the watermen would leave in the autumn oyster harvest, their wives would make them cakes by which they could remember the families and community they had left behind. Over time, the layers became smaller and smaller, and fudge icings replaced traditional buttercream.
The Smith Island Baking Company was founded in 2009 based on these same principles.
